My family loves curries. So much so that they could eat it every single day. Well, the requests come every day but I'm in charge of the cooking. I love experimenting with food and love trying other cuisines but I also don't like food going to waste. So to cater to my own healthy needs and to satisfy their love for Indian food, I have this foolproof masala chicken recipe on hand for the times I'm strapped for time but still want to put something super delicious on the table.

The thing I love most about this kind of chicken recipe, is that it pairs well with a numerous amount of other dishes, like dhal or pasta, as well as being able to be eaten alone with roti or your favourite bread. I try not to make it too spicy for the kids but you can up the chili powder in your recipe for an added kick.

 1 Chicken (with bones, cut into desired portions)
 2 tbsp Oil
 1 Onion
 1 Dried red chili (optional)
 2 Cinnamon sticks
 Chopped coriander for garnish
Marinade
 1 tsp Chopped ginger garlic mix
 1 tsp Ground cumin
 1 tsp Ground coriander
 1 tsp Salt
 1 tsp Chili Powder
 ¼ tsp Turmeric
 1 tsp Lemon juice
 2 tbsp Yoghurt (optional)

If possible, marinate chicken for a few hours or overnight. Otherwise, pierce chicken with a knife for the marinade to properly seep through.

Add the oil, dried chili and cinnamon sticks to a wide, flat pot on medium heat. After a minute, add the onions and fry until golden brown.

Add the chicken and brown slightly before adding 1/4 cup of boiling water and turning the heat down to low. Let simmer for 20-25 minutes until done and water is evaporated. Garnish with fresh coriander and serve.

Top tip: Serve with your favourite homemade atchaar for a fully fledged comfort meal.
